Brocolli Slaw & Lentils
Ingredients

8 oz of Broccoli Slaw
-
1/3 cup yellow lentils (moong) soaked for 1 hour
-
½ cup dried “no sugar added” cranberries
-
½ cup unsalted peanuts
-
1 medium jalapeno chopped (seeds removed)
-
Juice of 1 large lemon
-
2 tablespoons Olive Oil
-
1 cup chopped fresh cilantro
Instructions

Drain lentils
-
Mix all ingredients in a bowl and serve
Serving options: As an entre salad or as a side salad or a snack!
