Brocolli Slaw & Lentils


  • 8 oz of Broccoli Slaw

  • 1/3 cup yellow lentils (moong) soaked for 1 hour

  • ½ cup dried “no sugar added” cranberries

  • ½ cup unsalted peanuts

  • 1 medium jalapeno chopped (seeds removed)

  • Juice of 1 large lemon

  • 2 tablespoons Olive Oil

  • 1 cup chopped fresh cilantro


  1. Drain lentils

  2. Mix all ingredients in a bowl and serve



Serving options: As an entre salad or as a side salad or a snack!
