Mango Cake

  • 1.5 Cups Chopped Mango or 1 Large sweet Mango

  • 2 eggs

  • 2 Tablespoons unsweetened Nut Milk of choice (I used cashew milk)

  • 1/4 Cup Coconut Oil

  • 1 teaspoon Vanilla extract

  • 1/2 cup coconut flour

  • 3/4 teaspoon Baking Soda

  • 1/4 teaspoon Salt

  • 1/4 cup shredded coconut for topping

Instructions:

  1. Add first 5 ingredients (mango, eggs, Milk, Oil, Vanilla) in a blender and blend until smooth.

  2. Combine flour, baking soda and salt in a bowl and mix well

  3. Add wet ingredients from blender to bowl and combine all ingredients

  4. Grease baking pan - loaf pan or 8 inch round pan

  5. Bake for 20-30 minutes at 350 degrees in the oven. remove from oven and add shredded coconut on top of cake.

  6. Bake additional 10 minutes or until inserted knife comes out clean

 

Enjoy with a cup of coffee or tea or by itself!

Notes:I have not added any sugar but if you want it sweeter than the mango please add 2 teaspoons of honey!
