Quinoa Brownies

Ingredients:

  • 1/2 Cup cooked quinoa

  • 1/2 Cup cacao powder

  • 2 Tablespoons Flax Meal 

  • 1/4 cup coconut oil

  • 3/4 Almond butter (or peanut butter)

  • 1/3 unsweetened apple sauce

  • 1/4 maple syrup or honey

  • 2 teaspoon vanilla extract

  • 1/2 teaspoon salt

Instructions:

  1. Prepare fax egg by combining flax meal with 6 tablespoons of water. Set in the refrigerator for 30 minutes to set.

  2. In a large bowl combine all ingredients and mix well. Do not over mix.

  3. Preheat oven to 350 F. Prepare an 8x8 baking dish by lightly spraying with cooking spray.

  4. Transfer batter to baking dish.

  5. Bake 35-45 minutes or until a toothpick can be removed clean.

  6. Allow to cool in the pan 30 minutes before cutting. Plastic knife cuts well.
